Sams BBQ, owned and operated by 4 brothers, opened in the 1970s in Austin, Texas. Still serving mutton and recently adding turkey sausage, the menu hasn’t changed much over the years. While the menu says they close at 10 p.m., the general rule there is that they close when the people stop coming, which doesn’t happen until late into the night.
